Easy & Healthy Carrot and Coriander Soup: Your Go-To Winter Comfort Recipe
As the festive season winds down and a brand new year begins, many of us find ourselves craving something wholesome, nourishing, and easy to prepare. After a period filled with indulgence, late nights, numerous celebratory meals, and often a good amount of travel and socializing, it’s entirely normal to feel a little depleted and ready for a reset. I, for one, certainly felt the lingering effects of the holiday cheer – three Christmas dinners in quick succession, a fair bit of traveling, and many cherished late nights with loved ones left me thoroughly worn out but equally grateful. A brief digital detox over Christmas was incredibly refreshing, and now it’s wonderful to be back and share a recipe that perfectly embodies the spirit of fresh starts and healthy habits.
This time of year often brings with it a desire for healthier eating, simpler routines, and comforting yet guilt-free meals. And what could be more perfect than a bowl of classic carrot and coriander soup? It’s not just a dish; it’s a warm hug in a bowl, packed with vibrant flavors and essential nutrients. This beloved vegetarian soup is renowned for its incredible simplicity, speed of preparation, and its wonderfully wholesome nature, making it an ideal choice for a busy weeknight dinner or a comforting lunch during the colder months.
Setting Intentions for the New Year: Home, Blog, and Celebrations
While I don’t typically adhere to strict New Year’s resolutions, I do find this period a perfect opportunity to set some meaningful goals for the months ahead. This year, my focus is threefold, aiming to bring more order and joy into various aspects of my life. First on the list is tackling our new home. We acquired our house in September, and after the initial burst of decorating one room, the rest has, shall we say, taken on a life of its own – mostly in the form of delightful clutter! Our budget is modest, meaning this will be a slow, deliberate process, but a much-needed one. Unsurprisingly, the kitchen is my absolute priority; a functional and beautiful kitchen is, after all, the heart of any home and essential for creating all the delicious recipes you see here.
My second goal centers around the blog itself. Growing and monetizing Domestic Gothess has been a journey of passion, dedication, and continuous learning. It’s challenging work, requiring consistent effort and creativity, but the rewards of connecting with you, my readers, and seeing this community flourish are immeasurable. I am incredibly grateful for your support and enthusiasm; you truly make every step of this process worthwhile. I’m eager to continue expanding our culinary adventures and bringing even more delightful recipes to your screens. Your engagement, comments, and shares are invaluable, so thank you for being a part of this amazing journey!
Finally, on a more personal note, my fiancé and I are approaching a significant milestone: five years of engagement and eleven years together! Despite our long-standing commitment, wedding planning has remained elusive. A combination of financial considerations and, truthfully, a shared lack of organizational prowess has kept us from taking the plunge. If any of you have brilliant tips for simple, beautiful, and budget-friendly wedding ideas, please do share them! We would be incredibly appreciative of any advice to help us finally celebrate our union.
Why You’ll Love This Healthy Carrot and Coriander Soup
Now, let’s talk about the star of today’s post: this incredible carrot and coriander soup. While I enjoy a variety of soups and stews throughout the year, this particular combination holds a special place in my heart, especially during the colder months. It’s the ultimate comfort food – wonderfully filling, incredibly warming, and surprisingly light. Beyond its delicious taste, this soup is a powerhouse of health benefits and remarkably quick and easy to prepare, making it a perfect addition to your weekly meal rotation.
A Nutritional Powerhouse: The Benefits of Carrots and Coriander
Carrots are not just for bunnies; they are a fantastic source of beta-carotene, which converts to Vitamin A in the body, essential for good vision, immune function, and skin health. They also provide a good amount of fiber, aiding digestion and promoting a feeling of fullness. Coriander, both fresh and ground, adds a distinctive aromatic freshness and warmth to the soup. Beyond its flavour, coriander is known for its antioxidant properties and can aid digestion. This soup leverages these natural ingredients to create a meal that is both delicious and incredibly good for you.
The Perfect Winter Warmer and Healthy Reset
There’s something uniquely satisfying about a steaming bowl of homemade soup on a chilly day. This carrot and coriander soup delivers on all fronts – it’s hearty enough to be a main meal but light enough not to leave you feeling heavy. It’s the ideal antidote to post-holiday overindulgence and perfectly aligns with any New Year’s goal of eating more healthily. Plus, its vibrant orange hue is simply cheerful, a welcome splash of colour during grey winter days.
Quick, Easy & Ideal for Meal Prep
One of the best features of this recipe is its straightforward preparation. You won’t need any fancy equipment or complex techniques, just a large pot and a stick blender. It’s truly a beginner-friendly recipe that yields impressive results every time. I particularly love to cook a large batch, which keeps beautifully in the fridge for several days. This makes it an absolute lifesaver for quick, healthy lunches throughout the week, especially when paired with a slice of buttered toast or a crusty roll. The flavors actually deepen overnight, making leftovers even more delicious!
I actually photographed this soup quite some time ago, but the timing for sharing it now, in the midst of January, feels absolutely perfect. As many people embark on healthier eating habits and winter dieting, soup becomes an indispensable friend. It’s low in calories, high in nutrients, and provides that much-needed feeling of warmth and satiety.

Classic Carrot and Coriander Soup Recipe

Carrot And Coriander Soup
Ingredients
- 2 tbsp olive oil
- 1 large onion diced
- 4 cloves garlic crushed
- 2 tsp ground coriander
- 750 g (26oz) carrots diced
- 1 large potato (about 450g/16oz) peeled and diced
- 1.2 litres (5 cups) vegetable stock
- 200 ml (½ + ⅓ cup) milk
- handful fresh coriander (about ½ a 25g packet)
- salt and pepper
Instructions
-
Step 1: Sauté Aromatics. Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the diced onion and sauté gently for about 10 minutes, stirring occasionally, until it becomes soft and translucent. This slow sauté brings out the sweetness of the onion. Next, stir in the crushed garlic and ground coriander. Cook for another 2 minutes, allowing the aromatic spices to release their fragrance, being careful not to burn the garlic. The kitchen will start smelling wonderful at this stage!
-
Step 2: Simmer Vegetables. Add the diced carrots and peeled, diced potato to the pot. Pour in the vegetable stock, ensuring the vegetables are mostly submerged. Bring the mixture to a rolling boil, then immediately reduce the heat to a gentle simmer. Cover the pot and let it cook for approximately 25 minutes, or until both the carrots and potato are fork-tender. This ensures a smooth consistency when blended.
-
Step 3: Blend and Season. Remove the pot from the heat. Carefully add the milk and the fresh coriander to the soup. Using an immersion blender (stick blender), blend the soup directly in the pot until it reaches your desired smooth consistency. Alternatively, you can carefully transfer the soup in batches to a regular blender and blend until smooth (exercise caution with hot liquids!). Once blended, taste the soup and season generously with salt and freshly ground black pepper to your preference. Serve hot and enjoy this wonderfully comforting and healthy soup!
Tips for the Best Carrot and Coriander Soup
- Achieving Creaminess: For an extra creamy texture without added fat, ensure your potato is well-cooked before blending. The starch from the potato helps thicken the soup naturally. If you prefer a richer soup, a splash of coconut milk (for a vegan option) or cream can be added with the milk.
- Spice Level: If you enjoy a bit of a kick, consider adding a pinch of chili flakes or a small amount of finely grated fresh ginger along with the garlic and ground coriander.
- Garnishes: A swirl of fresh cream or a sprinkle of extra fresh coriander leaves makes for a beautiful and flavorful garnish. Toasted pumpkin seeds or a drizzle of good quality olive oil can also add a lovely finishing touch.
- Storage and Freezing: This soup is fantastic for meal prep! Store leftovers in an airtight container in the fridge for up to 3-4 days. It also freezes exceptionally well for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop or in the microwave.
- Vegan Adaptation: To make this soup entirely vegan, simply swap the regular milk for your favorite plant-based milk, such as unsweetened almond milk, oat milk, or for an even creamier result, coconut milk. The rest of the ingredients are already naturally plant-based.
Perfect Pairings for Your Soup
While this carrot and coriander soup is delicious on its own, it truly shines when paired with simple accompaniments. A classic choice is warm, buttered toast, perfect for dipping and soaking up every last drop. For a heartier meal, serve it alongside a fresh green salad with a light vinaigrette, or with some crusty sourdough bread. Homemade garlic croutons also make an excellent addition, adding a delightful crunch and extra flavor to each spoonful.
I genuinely hope this recipe becomes a staple in your kitchen, offering warmth, nourishment, and a delicious way to embrace healthier eating habits. It’s a testament to how simple, fresh ingredients can come together to create something truly extraordinary. Enjoy every spoonful!
