Now, let’s turn our attention back to the star of the show: this incredible Gin and Bitter Lemon Sorbet. This recipe yields a dessert that is remarkably light, exquisitely refreshing, and perfectly balanced in its sweetness and tang. It’s designed to be an adult-only treat, incorporating a very generous pour of gin, which contributes to both its unique flavor profile and its delightful, slightly softer texture. Beyond its taste, one of the greatest appeals of this sorbet is its surprising ease of preparation, making it an accessible luxury for any home cook.

The process begins by infusing carbonated bitter lemon and sugar with juniper berries. This crucial step is what truly amplifies that distinctive ‘gin’ flavor, grounding the sorbet in its botanical roots even before the gin is added. After a gentle simmer and cooling period, fresh lemon juice and a substantial amount of gin are stirred in. I intentionally pushed the limits of gin content to achieve this soft-serve texture, recognizing that a “gin slushy” is hardly a bad outcome. For a firmer, yet still spoonable, consistency, simply transfer the churned sorbet to a freezer-safe container and allow it to set overnight. Even then, it will retain a delightful soft-serve quality, making it incredibly easy to scoop and enjoy. Given the substantial amount of gin and its wonderfully sharp, zesty flavor, this sorbet is unequivocally an indulgent treat for adults only, perfect for special occasions or a sophisticated everyday indulgence.

Gin And Bitter Lemon Sorbet

Ingredients

  • 125 g granulated or caster sugar
  • 30 juniper berries , bruised
  • 400 ml carbonated bitter lemon
  • 125 ml fresh lemon juice (about 2 large lemons)
  • 75 ml gin
  • 1 egg white

Instructions

  • Place the sugar, juniper berries and bitter lemon in a pan, bring up to a simmer and simmer gently for five minutes then remove from the heat and leave to cool. Stir in the lemon juice and gin and refrigerate until cold.
  • Gently whisk the egg white in a large jug until just frothy then pass the lemon mixture through a sieve into the jug and whisk to combine. Churn in an ice cream maker according to the manufacturers instructions; it will not freeze as firmly as usual due to the gin but should reach at least a thick slushy texture.
  • Transfer to a freezer-proof container and freeze overnight, it will remain a soft-serve consistency but will become firmer (unless you don’t have a very powerful freezer in which case you may need to use less gin).
