How To Master Your Vegan Chorizo And Potato Hash: A Simplified Approach
Making a fantastic potato hash doesn’t have to be complicated. Traditionally, hash involves boiling potatoes and then pan-frying them. However, our method streamlines this process significantly by directly roasting the potatoes. This not only saves time but also guarantees wonderfully crisp and golden potatoes without the need for constant stirring and attention.
For this recipe, we utilize a delightful combination of regular white potatoes (such as Maris Piper or Russet) and vibrant sweet potatoes. This mix isn’t just for aesthetic appeal; it adds layers of flavor and a boost of nutrition. White potatoes provide that classic starchy texture that crisps up beautifully, while sweet potatoes contribute a delicate sweetness and a host of vitamins and fiber, making your hash both delicious and a bit healthier.
While your potatoes are diligently crisping in the oven, you can prepare the aromatic base for your hash. Gently sauté a finely chopped red onion until it becomes translucent and sweet. Follow this with diced red bell peppers, which add a lovely crunch, vibrant color, and a touch more sweetness. Finally, crushed garlic is added, infusing the mixture with its pungent, irresistible aroma. This foundational mix of vegetables sets the stage for the bold flavors of the chorizo.
Next up, the star ingredient: your vegan chorizo sausages. Slice them into small, manageable pieces, perfect for integrating into the hash. Add these slices to your pan with the softened vegetables and fry them until they develop a beautiful crispiness around the edges. This step is crucial for unlocking their full smoky and savory potential, ensuring they contribute maximum flavor and texture to the final dish.
Once your potatoes have achieved their ideal golden-brown crispness from roasting, gently transfer them into the pan with the chorizo and vegetable mixture. This is where everything comes together! Season generously with plenty of salt and freshly ground black pepper. If your chosen vegan chorizo is on the milder side, or if you simply adore extra smoky notes, now is the perfect time to sprinkle in a bit more smoked paprika. Stir everything thoroughly to combine, ensuring all ingredients are well-distributed and coated in those magnificent flavors.
A final flourish of freshly chopped parsley is all that’s needed to brighten up this hearty vegan chorizo and potato hash before serving. The minimal seasoning approach is intentional, allowing the rich, smoky profile of the chorizo to truly shine. However, if you’re a fan of experimenting, feel free to incorporate additional herbs and spices to customize the flavor to your heart’s content. A pinch of chili flakes for extra heat, or some dried oregano for an earthy touch, can work wonders.

Demystifying Vegan Chorizo: Choosing the Right Sausage
The success of your vegan chorizo and potato hash largely hinges on the quality and flavor of the vegan chorizo you select. As an enthusiast based in the UK, I’ve had the pleasure of trying several options, and my personal favorite for this dish has been Sainsbury’s Love Your Veg chorizo style shroomdogs. Their robust, smoky flavor truly stands out and requires minimal additional seasoning.
However, the world of vegan sausages is constantly expanding, and what’s available can vary significantly by region and brand. I’ve also experimented with Linda McCartney chorizo and red pepper sausages for this hash. While still a good option, I found them to be less intensely flavored, which meant I needed to compensate with extra seasoning and a generous dash of smoked paprika to achieve the desired depth. It’s also worth noting that these often come frozen, requiring prior defrosting and sometimes a separate cooking step before dicing and adding to the pan.
In essence, almost any type of vegan chorizo-style sausage will work beautifully in this recipe. The key is to understand that their flavor profiles can range from mild to wonderfully spicy and smoky. Therefore, be prepared to adjust your seasonings accordingly. If your chosen chorizo is packed with strong flavors, like the Sainsbury’s variety, you might find that salt, pepper, and the chorizo’s inherent spices are enough. If you opt for a milder alternative, don’t shy away from adding a bit more smoked paprika, a pinch of chili powder, or even some cayenne pepper to boost that signature chorizo warmth.
When selecting your vegan chorizo, consider looking at the ingredient list for indicators of flavor, such as paprika, chili, garlic, and other spices. Some brands offer a softer texture, while others aim for a firmer, more sausage-like bite. Both can work, but a firmer sausage will hold its shape better and crisp up more effectively in the hash. Don’t be afraid to try a couple of different brands to find your personal favorite – it’s all part of the fun of vegan cooking!

Serving Suggestions and Creative Variations
This vegan chorizo and potato hash is wonderfully satisfying on its own, but its versatility truly shines when paired with other delicious components or adapted with creative twists. Here are some ideas to inspire your next meal:
- For Breakfast or Brunch: Top with a perfectly ripe sliced avocado for creamy richness, a dollop of vegan sour cream or cashew crema, or a fried vegan egg for extra protein. A sprinkle of fresh cilantro or extra hot sauce can add another layer of flavor.
- For a Hearty Dinner: Serve alongside a fresh green salad with a zesty vinaigrette to cut through the richness, or complement it with some steamed greens like kale or spinach. It also makes an excellent filling for warm tortillas or wraps for a quick and casual meal.
- Spice It Up: For those who love a bit more heat, incorporate finely diced jalapeños or serrano peppers into the sautéed vegetable mix, or add a pinch of red pepper flakes with the spices.
- Add More Veggies: Feel free to toss in other vegetables. Cooked black beans or corn kernels can add a lovely texture and nutritional boost. Sautéed mushrooms, wilted spinach, or even some diced zucchini would also be delicious additions.
- Herb Power: While parsley is a classic choice, consider fresh cilantro for a more Mexican-inspired flavor profile, or a mix of fresh chives and thyme for an earthy aroma.
- Cheesy Goodness: A sprinkle of vegan shredded cheese over the hot hash, allowed to melt slightly, can add an extra layer of indulgence.

Vegan Chorizo and Potato Hash
Ingredients
- 700 g (25oz) white potatoes (such as Maris Piper, Yukon Gold, or Russet, peeled and diced into 2cm cubes)
- 600 g (21oz) sweet potatoes (peeled and diced into 2cm cubes)
- 3 Tbsp olive oil (divided, plus extra if needed for roasting)
- 1 large red onion (finely chopped)
- 2 red bell peppers (diced)
- 4 cloves garlic (peeled and crushed or minced)
- 1 approx 280g (10oz) pack of Chorizo style vegan sausages (sliced into 2cm pieces, e.g., Sainsbury’s chorizo shroomdogs)
- ½ tsp smoked paprika (optional, adjust to taste and chorizo strength)
- salt and freshly ground black pepper (to taste)
- chopped fresh parsley (to serve, or fresh cilantro)
Instructions
-
Preheat your oven to 200°C/400°F/gas mark 6. Peel both the white and sweet potatoes, then chop them into uniform 2cm (approx. ¾ inch) dice. Transfer the diced potatoes to a large roasting tray, ensuring they are in a single layer to promote even crisping. Drizzle with 2 Tbsp of the olive oil and season generously with salt and freshly ground black pepper. Toss well to ensure all potato pieces are lightly coated. Roast for approximately 45 minutes, stirring occasionally every 15-20 minutes, until they are beautifully golden brown and delightfully crisp.
-
While the potatoes are roasting, prepare the remaining ingredients. Peel and finely chop the large red onion. Dice the red bell peppers into similar sized pieces as the potatoes for even cooking. Peel and crush (or mince) the garlic cloves. Finally, cut your chosen chorizo-style vegan sausages into 2cm slices. Having everything prepped makes the assembly smooth.
-
Heat the remaining 1 Tbsp of olive oil in a large, heavy-bottomed frying pan or cast iron skillet over a low to medium heat. Add the finely chopped red onion and cook gently for about 10 minutes, stirring occasionally, until the onion has softened and turned translucent without browning too much. Next, add the diced red pepper and crushed garlic to the pan. Continue to cook for a further 5 minutes, allowing the peppers to soften slightly and the garlic to become fragrant. Then, add the sliced vegan chorizo and the smoked paprika (if using, remember to adjust based on your chorizo’s flavor strength). Cook for an additional 10 minutes, stirring frequently, until the chorizo slices are heated through and have developed crispy edges.
-
Once the roasted potatoes are perfectly crisp and tender on the inside, carefully transfer them from the roasting tray into the frying pan with the chorizo and vegetable mixture. Season everything thoroughly with extra salt and freshly ground black pepper to taste. Gently stir all the ingredients together, ensuring an even distribution of crispy potatoes, smoky chorizo, and tender vegetables. Serve immediately, scattered with plenty of freshly chopped parsley or cilantro for a burst of freshness. Enjoy your sensational vegan chorizo and potato hash!
