I mean, he’s pretty perfect in countless other ways, but everyone has a *few* charming faults, right?

Anyway, if you, like me, truly appreciate the humble sweet potato, then you absolutely *must* make this recipe. And make it soon! It is unbelievably delicious and incredibly filling. It has that satisfying, hearty quality that makes it feel like a cheat meal, even though it’s packed with nutrients and incredibly healthy.

Sloppy Joe Stuffed Sweet Potatoes

Ingredients

  

  • 2 baked sweet potatoes
  • 1 lb lean ground turkey or beef
  • 1/4 onion chopped
  • 1 green pepper chopped
  • 1 clove minced garlic
  • 1/2 teaspoon chili powder
  • 1/2 tablespoon cumin
  • 1 tablespoon honey or slightly more to taste
  • 14 oz diced tomatoes
  • 6 oz tomato paste
  • Shredded cheddar cheese optional, for topping

Instructions

 

  • Heat a large skillet over medium heat and spray lightly with cooking spray. Add the chopped onions and green peppers, and sauté until they are tender, about 5-7 minutes. Stir in the minced garlic and continue to sauté for an additional minute until fragrant.
  • Push the sautéed vegetables to one side of the skillet. Add the lean ground turkey or beef to the empty side of the pan. Break up the meat with a spoon and cook until it is fully browned, draining any excess fat if necessary. Once browned, mix the meat thoroughly with the sautéed vegetables.
  • Next, add the chili powder, cumin, honey, diced tomatoes (undrained), and tomato paste to the skillet with the meat and vegetable mixture. Stir everything together until well combined.
  • Reduce the heat to low, cover the skillet, and let the Sloppy Joe mixture simmer gently for 10-15 minutes. This allows the flavors to meld beautifully and the sauce to thicken slightly. Stir occasionally to prevent sticking.
  • While the Sloppy Joe mixture simmers, prepare your baked sweet potatoes. Carefully cut each sweet potato in half lengthwise. Using a fork or spoon, gently mash the flesh of each half slightly to create a “bowl” for the filling. Divide the prepared Sloppy Joe mixture evenly over each sweet potato half.
  • If you have extra BLUE containers for the day according to your 21 Day Fix plan, feel free to top your stuffed sweet potatoes with a sprinkle of shredded cheddar cheese. Otherwise, enjoy them plain for a dairy-free option. Either way, they are absolutely yummy!
