While the recipes themselves aren’t overly complicated in terms of technique, a significant number of them call for ingredients that are not typically found in the average supermarket. We’re talking about items like candlenuts, arame, kombu, acai puree, daikon, lacuma powder, and sago, to name a few. This means that to prepare a good portion of the recipes, one would likely need to source these specialty ingredients online or from dedicated ethnic or health food stores, which isn’t always convenient for everyday cooking.

Despite the ingredient sourcing challenge for some dishes, the recipe for these particular energy balls from the book turned out exceptionally well. I’ve found myself happily snacking on them most days since making them, a testament to their deliciousness and convenience. Ingredients

  • 100 g (⅔ cup) pumpkin or sunflower seeds (I used half and half)
  • 4 Tbsp sesame seeds plus extra for rolling if you like
  • 50 g (⅔ cup) unsweetened desiccated coconut plus extra for rolling
  • 2 Tbsp ground flaxseed
  • 50 g (⅓ cup) mixed dried fruits (dates, apricots, raisins) chopped if large
  • 1-2 Tbsp of your favourite superfood powder (such as maca or lucuma) optional
  • 50 g (⅓ cup) cacao nibs
  • 1 tsp ground cinnamon plus extra for rolling
  • 120 ml (½ cup) maple syrup (or agave)
  • 80 g (⅓ cup) nut or seed butter (I used peanut butter)
  • a pinch of salt
  • cacao powder for rolling
  • ground almonds as needed

Instructions

  • Combine all of the ingredients apart from the maple syrup and nut butter in a food processor and blend until finely chopped. Ensure the mixture is well combined but still retains some texture, rather than becoming a fine paste.
  • Next, add the maple syrup and nut butter to the food processor. Continue to blend until the mixture begins to come together and appears smooth, yet still has visible pieces of the chopped ingredients, providing that desirable chewy texture. If the mixture feels too sticky to handle and roll into balls, gradually stir in ground almonds, one tablespoon at a time, until it reaches a firm but pliable consistency that’s easy to shape.
  • Using your hands, take small portions of the mixture and roll them into bite-sized balls, roughly the size of ping-pong balls. You should be able to make approximately 15 energy balls from this recipe. This is a great step to get the kids involved in!
  • For an extra touch of flavor and visual appeal, you can roll the finished energy balls in a coating of your choice. Popular options include cacao powder for a rich, slightly bitter finish, desiccated coconut for sweetness and texture, sesame seeds for a nutty crunch, or an extra sprinkle of ground cinnamon. Once coated, store the energy balls in an airtight container in the fridge for up to 1 week to maintain their freshness and texture.
