  • 3 cloves garlic
  • a small handful of fresh coriander (cilantro)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp chilli powder
  • 2 400g (15oz) cans black beans rinsed and drained
  • 1 ½ tbsp soy sauce
  • 100 g (¾ cup) dry breadcrumbs (not fresh)
  • 1 large egg
  • salt and pepper

Toppings:

  • 6 burger buns
  • cheese slices
  • salsa
  • sour cream
  • sliced avocado
  • sliced tomato
  • lettuce
  • pickles

Instructions

  • Peel and finely chop the brown onion. Peel and crush the garlic cloves. Finely chop the fresh coriander (cilantro).
  • Heat the olive oil in a large frying pan over a low to medium-low heat. Add the chopped onion and cook for about 10 minutes, stirring occasionally, until the onion has softened and turned translucent. Add the crushed garlic and all the ground spices (cumin, coriander, and chili powder) to the pan, cooking for another minute until fragrant.
  • Add the rinsed and drained black beans to the pan with the onion and spices.
