Ingredients
Pancakes:
- 60 g (⅔ cup) porridge oats
- 1 large ripe banana chopped
- 1 large egg
- 150 ml (½ + ⅛ cup) milk of your choice (regular cows milk or oat/almond/rice/soy milk)
- 2 tbsp manuka honey
- 120 g (1 cup) white spelt flour
- 2 tsp baking powder
- 150 g (1 cup) fresh blueberries
- coconut oil for frying

Begin by preparing your dry ingredients. Place the porridge oats into a high-speed blender and process until they are finely ground into a flour-like consistency. This step is crucial for achieving the desired pancake texture. Next, add the chopped ripe banana, the large egg, your chosen milk (whether it’s regular cow’s milk or a plant-based alternative like oat, almond, rice, or soy milk), and the manuka honey to the blender. Blend all these wet ingredients together until you have a smooth and uniform mixture.

Once the wet ingredients are smooth, add the white spelt flour and the baking powder to the blender. Blend again until the mixture is completely smooth and no lumps remain. The batter should be relatively thick – a consistency that can be poured but isn’t watery. If you find the batter to be excessively thick, you can gradually add a small splash more of your chosen milk, one tablespoon at a time, until it reaches the ideal pourable consistency. Be careful not to thin it too much.

Heat a non-stick frying pan over a low to medium heat. Lightly grease the pan with a small amount of coconut oil – just enough to prevent sticking. Using a ¼ cup measure or a small ladle, pour portions of the batter into the heated pan to form individual pancakes. Immediately scatter a few fresh blueberries over the top of each pancake. Cook for several minutes until you see bubbles appearing on the surface and the edges look set, indicating that the bottom is cooked through and golden brown. The surface should also no longer appear wet.
