Oh my goodness, friends, after what felt like the longest winter ever, the warmth has finally arrived! And it came in with a bang. Just yesterday, I was bundled up in a winter coat under a blanket while my youngest played outside. Today, I’m practically living in flip-flops, as it seems we’ve completely bypassed spring and catapulted straight into the glorious days of summer. This sudden shift means one thing: it’s time for all the refreshing, healthy treats!

I’m certainly not complaining about the sunshine, but I might need to schedule a pedicure and grab some sunless tanner ASAP! More importantly, it’s the absolute perfect moment to finally share this incredible recipe with you. I’m beyond thrilled because I made these Banana Ice Cream Bon Bons countless times last summer but never quite got around to posting them. It’s the story of my life these days, always a project in motion! But trust me, these Bon Bons were worth every moment of anticipation, and they are about to become your new favorite healthy summer dessert.

Does anyone else remember those delightful Ice Cream Bon Bons from the 80s? Or is that just a sign of my age? Whatever happened to those little bites of joy? It feels like they vanished without a trace, which makes no sense at all. Why would something so incredibly amazing just disappear from grocery store shelves? A true mystery of our time!

How am I supposed to achieve my dream of sitting around all day, casually eating Bon Bons, if they don’t even make them anymore? This, my friends, is precisely why many of my recipes are born out of sheer necessity and a craving for healthier alternatives!

Much like my beloved 21 Day Fix Ice Cream Pie, this creamy, dreamy ice cream treat is crafted from the pure magic that is banana ice cream – often lovingly called “nice cream.” If you haven’t yet experienced this miracle dessert, you absolutely must start slicing and freezing bananas immediately! I almost always have a stash of frozen banana slices ready to go in my freezer. My daughter and I love experimenting with fun flavors, like chocolate peanut butter banana and even the surprisingly delicious Mint Chip Nice Cream. These bon bons take that simple pleasure to an entirely new level, making them portion-controlled and perfectly dippable.

How To Make Banana Ice Cream: Your New Favorite “Nice Cream”

Creating your very own healthy banana ice cream, or “nice cream,” is incredibly simple and requires minimal effort for maximum deliciousness!

You don’t even need a fancy ice cream maker (though, I confess, I still dream of owning one someday!). All you truly need is a reliable food processor. I’ve been happily using this Cuisinart model since my wedding, and it has consistently delivered fantastic results for years, proving its worth for countless healthy recipes.

Here’s the simple two-step process:

  1. Step One: Prepare and Freeze Bananas. Start with ripe bananas – the riper they are, the sweeter your “nice cream” will be. Peel them, then slice them into even rounds. Arrange the slices in a single layer on a parchment-lined baking sheet, or place them into gallon-sized freezer bags. Freezing them flat and separately prevents them from clumping together, making them easier to blend. Freeze until completely solid, ideally for at least 4-6 hours or overnight.
  2. Step Two: Blend to Perfection. Once your banana slices are frozen solid, transfer them to your food processor. Begin blending. At first, they will look crumbly, almost like frozen crumbs. Don’t worry, this is normal! Keep processing, and you’ll notice the texture transform. It will go from crumbly to a thick paste, and finally, to a smooth, creamy consistency that closely resembles soft-serve ice cream. If your mixture is struggling to blend, add a splash of vanilla almond milk (as directed in the recipe below) one tablespoon at a time, until it reaches your desired creaminess. You’ll likely need to stop and scrape down the sides of the food processor bowl a few times to ensure everything blends evenly. This entire process typically takes about 3-5 minutes, so a little patience goes a long way!

And voilà – you have instant, healthy, homemade ice cream! It’s truly a magical transformation that makes healthy eating feel like a treat. This versatility is what makes banana ice cream a staple in my kitchen for guilt-free desserts.

Ingredients

Banana Ice Cream:

  • 4 ripe bananas
  • 2 Tbsp vanilla almond milk add more as needed

Homemade Magic Shell

  • 1/2 cup pure cocoa powder
  • 1/2 cup coconut oil
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Slice ripe bananas into even rounds and freeze them flat in gallon-size ziplock bags or on a parchment-lined baking sheet until solid.
  • Once the bananas are thoroughly frozen, remove them from the freezer and place them into a food processor. Blend until the mixture is completely smooth and creamy, resembling soft-serve ice cream. You may need to add a splash of vanilla almond milk, one tablespoon at a time, to achieve the desired consistency, and pause to scrape the sides of the bowl occasionally. This blending process typically takes 3-5 minutes, requiring a little patience.
  • Line a baking sheet with parchment paper. Using a melon baller or a tablespoon, scoop out the banana ice cream mixture to form individual bonbons. If the ice cream has become too soft, refreeze the mixture for a few minutes to solidify it slightly before scooping. This recipe should yield approximately 24 bonbons. Alternatively, you can press the mixture into mini silicone molds for perfectly shaped treats.
  • Place the formed bonbons back into the freezer to chill and harden further while you prepare the homemade magic shell. They need to be very cold for the shell to set properly.
  • To create the magic shell, gently heat the coconut oil over medium-low heat in a small saucepan until melted. Remove it from the heat and immediately whisk in the pure cocoa powder, honey, a pinch of salt, and vanilla extract until the mixture is completely smooth and well combined. Ensure there are no lumps.
  • Retrieve the thoroughly frozen bonbons from the freezer. Dip each bonbon into the warm magic shell mixture, or spoon the chocolate over each one, allowing any excess to drip off. The chocolate coating will instantly harden on contact with the cold ice cream. Place the finished bonbons back on the parchment-lined baking sheet and freeze for a few additional minutes before serving for the best texture. Store any leftover bonbons in an airtight container in the freezer.
