Superfood Chocolate Bark

Ingredients

  • 200 g (7oz) dark chocolate chopped, preferably 70% cacao or higher
  • 100 g (3.5oz) white chocolate chopped
  • 1 tsp matcha powder (ceremonial or culinary grade)
  • 1 ½ tsp freeze dried blueberry powder
  • handful dried goji berries
  • handful whole raw almonds
  • handful pumpkin seeds
  • 1 tsp bee pollen (omit if allergic)
  • 1 tsp chia seeds

Instructions

  • Line a baking sheet with baking parchment. Melt the dark chocolate, either in a heatproof bowl set over a pan of gently simmering water (ensure the bowl does not touch the water), or in short bursts (30 seconds at a time, stirring well after each) in the microwave. Be careful not to let the chocolate get too hot, as this can cause it to seize. Stir until completely smooth.
  • Melt the white chocolate using the same method. Once melted and smooth, pour approximately half of it into a separate small bowl. Stir the matcha powder into one half of the white chocolate until well combined and lump-free. Stir the freeze-dried blueberry powder into the other half of the white chocolate. If either chocolate becomes too thick while working, microwave it for a few seconds to re-melt it to a drizzling consistency.
  • Pour the melted dark chocolate onto the prepared baking sheet. Use the back of a spoon or an offset spatula to spread it out evenly into a rough rectangle, about 1/4 to 1/2 inch thick. Immediately drizzle both the matcha-flavored white chocolate and the blueberry-flavored white chocolate over the dark chocolate base, reserving a little bit of each colored white chocolate for the final drizzle.
  • Before the chocolate sets, generously scatter the goji berries, almonds, pumpkin seeds, bee pollen, and chia seeds over the top of the bark. Finish by drizzling the remaining reserved white chocolates (matcha and blueberry) over the toppings for an extra decorative touch.
  • Allow the chocolate bark to set completely. This can take a couple of hours at room temperature, or about 20-30 minutes in the refrigerator. Once fully set and firm, use a sharp knife to carefully chop the large slab into rough, irregular pieces of desired size.
