The beginning of a new year often brings resolutions for healthier eating and more efficient cooking. While the start of the year might be met with chilly weather and a few lingering sniffles, don’t let that derail your healthy eating goals. This Instant Pot Beef and Broccoli recipe is exactly what you need to stay on track. Its ease of preparation and incredible flavor have already generated significant buzz within our community, proving that healthy and delicious can go hand-in-hand, even on busy or under-the-weather days.
Why Choose Instant Pot Beef and Broccoli?
When it comes to weeknight dinners, speed and simplicity are key, and the Instant Pot delivers on both fronts. This recipe leverages the magic of pressure cooking to transform thinly sliced flank steak into incredibly tender bites, while infusing it with a rich, savory, and slightly sweet sauce. The beauty of the Instant Pot is that it cuts down cooking time significantly, making it possible to enjoy a homemade, healthier version of your favorite Asian-inspired dish faster than ordering takeout.
Beyond its speed, the Instant Pot is fantastic for creating deep flavors. By sautéing aromatic ingredients like shallots and garlic directly in the pot, you build a robust flavor base before pressure cooking the beef. This multi-functionality means fewer dirty dishes and a more streamlined cooking process, which is always a win in my book. Whether you’re a seasoned Instant Pot user or just getting started, this beef and broccoli recipe is a perfect demonstration of its capabilities.
Crafting the Perfect Sauce and Tender Beef
The secret to this recipe’s amazing flavor lies in its simple yet effective sauce. We start by sautéing shallots and garlic until fragrant, building a foundational layer of flavor. Then, thinly sliced flank steak is added to the pot, ready to absorb all the deliciousness. The sauce itself is a quick whisk of coconut aminos, beef broth, and a touch of honey. If you haven’t tried coconut aminos before, it’s an excellent healthier, gluten-free alternative to soy sauce, offering a similar umami flavor with a slightly sweeter profile. However, if you can’t find it, low-sodium soy sauce makes for a perfectly acceptable substitute.
To achieve perfectly tender beef without overcooking the broccoli, we cook the components separately. The flank steak goes into the Instant Pot with the sauce, pressure cooking for just the right amount of time to become incredibly succulent. Broccoli, on the other hand, turns to mush quickly under high pressure, so we save it for the end. After the beef is cooked and the pressure is partially released (a technique similar to my Flank Steak Tacos recipe), we then perform a quick release to stop the cooking process.
Thickening the Sauce: The Slurry Trick
Once the beef is cooked, the sauce needs a little thickening to achieve that luscious, clingy texture you expect from beef and broccoli. This is where a “slurry” comes in. Don’t let the fancy name intimidate you – it’s simply a mixture of a thickening agent (I prefer arrowroot starch for its smooth finish and gluten-free properties, but cornstarch works beautifully too) and some of the hot cooking liquid from the pot. Whisking these together prevents clumps and allows the sauce to thicken beautifully when returned to the Instant Pot on sauté mode. This step ensures every bite is coated in a rich, flavorful sauce that truly elevates the dish.
The Broccoli: Perfectly Steamed Every Time
After the sauce is thickened, it’s time for the star vegetable: broccoli. Raw broccoli florets are added directly to the hot pot with the beef and sauce. Then, you simply place the lid back on (no need to lock or pressure cook again!) and let the residual heat from the Instant Pot work its magic. In just 5-10 minutes, you’ll have perfectly steamed broccoli that’s tender-crisp and vibrant green, not overcooked and mushy. This method is incredibly convenient, allowing you to quickly prepare the rest of your meal or simply take a moment to yourself while the broccoli steams to perfection. For an even quicker option, or if you prefer, feel free to use microwave-steamed frozen broccoli.
Serving Suggestions and Meal Prep
This Instant Pot Beef and Broccoli is incredibly versatile when it comes to serving. While it’s absolutely delicious served simply over fluffy white rice, don’t hesitate to explore other healthy options. Quinoa makes for a protein-rich alternative, or if you’re looking for a low-carb option, cauliflower rice is a fantastic choice that pairs wonderfully with the savory sauce. The vibrant flavors also make it perfect for meal prepping; simply store individual portions of the beef and broccoli with your chosen grain or vegetable, and you’ll have a healthy, homemade lunch or dinner ready to go throughout the week. Garnish with fresh scallions, a sprinkle of crushed red pepper for a little kick, and an extra grating of fresh ginger to elevate the flavors even further!
Health and Dietary Benefits
One of the best aspects of this homemade Instant Pot Beef and Broccoli is its alignment with various healthy eating plans. Being both gluten-free and dairy-free, it caters to common dietary restrictions without sacrificing flavor. It’s also fully approved for the 21 Day Fix program, making it easy to track your containers (1 Red, 1 Green, 1/2 TSP, 1 3/4 sweetener TSP per serving). For those following 2B Mindset or Weight Watchers, this recipe is a fantastic, satisfying option that fits well into a balanced diet. It’s packed with lean protein from the flank steak and essential nutrients from the broccoli, making it a meal you can feel good about enjoying often.

Prep Time: 10 mins
Cook Time: 22 mins
Total Time: 32 mins
Servings: 4 servings
Ingredients
- 2 teaspoons olive oil
- 1 1/2 pounds flank steak, sliced very thin against the grain
- 1/2 cup diced shallots (about one whole shallot)
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 2/3 cup beef stock (or sub water)
- 1/3 cup coconut aminos (or sub low sodium soy sauce)
- 2 tablespoons + 1 teaspoon honey
- 3 1/2 cups broccoli florets
- 1/2 tablespoon arrowroot (or your favorite thickener/flour; cornstarch also works well)
- Scallions, for garnish
- 1/4 teaspoon salt
- Crushed red pepper, for garnish
Instructions
- Whisk coconut aminos, beef stock, honey, and fresh ginger together in a bowl. Set aside.
- Set your Instant Pot to “Saute” mode. Once hot, add olive oil and shallots, sautéing until they begin to soften and become fragrant, about 3-4 minutes. Add in minced garlic and cook for an additional minute, stirring constantly.
- Pour the prepared stock mixture into the Instant Pot, then add the thinly sliced flank steak. Stir to combine.
- Secure the lid on your Instant Pot and set the valve to sealing. Select “Manual” or “Pressure Cook” and set the timer for 12 minutes.
- Once the cook time is complete, allow a natural pressure release for 5 minutes, then carefully perform a quick release of any remaining pressure.
- Carefully remove the lid. Ladle out 1 cup of the hot cooking liquid into a small bowl. In this liquid, whisk in 1/2 tablespoon of arrowroot starch (or cornstarch) until thoroughly combined to create your slurry.
- Return the slurry to the Instant Pot. Set the Instant Pot back to “Saute” mode and stir continuously until the sauce begins to thicken to your desired consistency. If it doesn’t thicken enough, you can repeat the slurry process with a small amount of additional thickener. Stir in the salt. Turn the Instant Pot to “Keep Warm” mode.
- Add the chopped broccoli florets to the pot with the beef and sauce. Stir everything together to coat the broccoli.
- Place the lid back on the Instant Pot (do not lock it or pressure cook again). Let the broccoli steam for 5-10 minutes using the residual heat of the pot, until it reaches your desired tenderness.
- When the broccoli is perfectly cooked, garnish generously with fresh scallions, crushed red pepper flakes (for a little heat), and additional grated ginger, if desired.
- Serve immediately over rice, quinoa, or cauliflower rice for a complete and delicious meal.
