  • 1 Tbsp ground flaxseed
  • 2 ½ Tbsp water
  • 250 g (9 oz) chestnut mushrooms
  • 1 Tbsp olive oil
  • 1 medium red onion peeled and diced
  • 4 cloves garlic peeled and crushed
  • 75 g (3 oz) walnuts
  • 50 g (½ cup) rolled porridge oats
  • 250 g (1 ⅔ cup) cooked puy lentils (I buy the precooked packets by Merchant Gourmet)
  • 2 Tbsp cornflour (cornstarch)
  • 35 g (4 Tbsp) dry breadcrumbs
  • 1 Tbsp soy sauce
  • 2 tsp miso paste
  • 1 Tbsp fresh thyme leaves
  • ¼ tsp smoked paprika
  • ½ tsp salt
  • a good grinding of black pepper
  • 6 burger buns and toppings of your choice to serve

Instructions

  • Preheat your oven to 190°C (375°F) or gas mark 5. Line a baking tray with baking parchment for easy handling.
  • In a small bowl, combine the ground flaxseed and water. Stir well and set aside to create your flax egg, which will act as a binder.
  • Place the chestnut mushrooms into a food processor and pulse until they are finely chopped. Be careful not to over-process them into a paste.
  • Heat the olive oil in a wide frying pan over a medium-low heat. Add the diced red onion and cook gently, stirring frequently, until the onion becomes soft and translucent.
  • Add the finely chopped mushrooms to the pan. Continue to cook, stirring regularly, until all of the excess water released by the mushrooms has evaporated and they begin to lightly brown. Stir in the crushed garlic and cook for just one more minute until fragrant.
  • In the food processor, combine the walnuts and rolled oats. Blend until they are finely chopped into a coarse flour. Then, add the cooked mushroom and onion mixture, the cooked puy lentils, breadcrumbs, cornflour (cornstarch), soy sauce, miso paste, the prepared flax egg, fresh thyme, smoked paprika, salt, and pepper.
  • Pulse the mixture in the food processor until all ingredients are well combined and fairly finely chopped, but still retaining a pleasant texture. Avoid blending until it’s completely smooth; some bite is desirable.
  • Remove the mixture from the food processor and give it a final good mix by hand to ensure everything is evenly distributed. Divide the mixture into six equal portions, and then shape each portion into a firm burger patty using your hands.
  • Place the patties on your prepared baking tray. Bake the burgers for approximately 30-35 minutes, making sure to flip them halfway through the cooking time. They should be firm to the touch and boast a lovely crispy, golden-brown exterior.
