This hearty vegan sausage casserole with lentils and farro has earned a coveted spot as a regular on my meal rotation, especially when the temperatures drop and a comforting, warming dish is exactly what’s needed. I absolutely adore it because it effortlessly combines ease of preparation with an explosion of rich, savory flavors. Beyond its delicious taste, it’s also a powerhouse of nutrition, proving that wholesome, plant-based eating can be incredibly satisfying and simple.
As we navigate the colder months, finding meals that are both nourishing and deeply comforting becomes a priority. This plant-based stew fits the bill perfectly. It’s designed to warm you from the inside out, offering a substantial and satisfying experience without any of the heaviness often associated with traditional casseroles. The combination of tender vegetables, protein-packed lentils, and chewy farro creates a textural symphony, while the perfectly cooked vegan sausages add a delightful savory depth that truly elevates the dish.
Why This Vegan Sausage Casserole Will Become Your New Favorite
There are countless reasons to fall in love with this vegan sausage and lentil casserole. Firstly, its simplicity is unmatched. Even on busy weeknights, you can whip up this flavorful meal with minimal fuss, making it an ideal choice for both seasoned home cooks and beginners alike. The straightforward steps and accessible ingredients ensure a stress-free cooking experience, allowing you more time to enjoy your delicious creation.
Secondly, it’s a nutritional champion. Packed with essential fiber from lentils and farro, a wealth of vitamins from a medley of vegetables, and quality plant-based protein from the sausages, it’s a meal that truly fuels your body. You’ll feel energized and satisfied without feeling sluggish, making it perfect for a healthy weeknight dinner. It’s a complete meal in one pot, bursting with goodness.
But beyond convenience and health, it’s the sheer deliciousness that keeps me coming back for more. The expertly blended spices, robust vegetable stock, and naturally sweet, earthy vegetables create a complex flavor profile that belies its straightforward preparation. It’s the kind of comforting food that makes you forget it’s vegan, appealing universally and winning over even those who are usually skeptical about plant-based alternatives. This hearty vegan stew truly embodies comfort and flavor.
Crafting Your Perfect Vegetable Base: Versatility at its Best
For the foundational vegetable base of this vegan casserole, I typically opt for a classic combination of carrots, butternut squash, and potatoes. This trio provides a fantastic balance of natural sweetness, rich earthiness, and starchy goodness that thickens the stew beautifully while adding a vibrant array of colors and essential nutrients. The potatoes help create that satisfying, creamy texture typical of a traditional casserole, while the squash and carrots infuse deep flavor.
However, one of the greatest joys and benefits of cooking this dish is its remarkable versatility. Feel free to unleash your culinary creativity and tailor the vegetables to your personal preferences, what you have on hand, or what’s currently in season. Excellent alternatives or fantastic additions include sweet potatoes, which will add an extra layer of sweetness and a lovely creamy texture. Parsnips offer their distinctive, slightly spicy and aromatic flavor, while swede (also known as rutabaga) provides a robust, earthy note that stands up well to slow cooking. For aromatic depth, consider incorporating finely chopped celery. Bell peppers, added a bit later in the cooking process, can provide a touch of color and a pleasant crunch. Even some zucchini, stirred in towards the end, can offer a lighter texture if you desire. For an extra boost of fresh greens, stir in a handful of fresh spinach or chopped kale during the last few minutes of cooking until they are just wilted. The most important tip is to cut all your chosen vegetables into roughly similar-sized pieces to ensure even cooking and a consistent texture throughout the stew.
The Heart of the Stew: Nutrient-Rich Lentils and Chewy Farro
These two cornerstone ingredients are what truly make this vegan casserole so incredibly hearty, satisfying, and nutritionally dense. For ultimate convenience and to streamline the cooking process, I predominantly use tinned lentils, which are pre-cooked and simply require draining and rinsing before being added to the stew. If you prefer, the pre-cooked lentils that often come in a sachet work just as well, offering the same time-saving benefits without compromising on texture or taste. Lentils are a fantastic source of plant-based protein and dietary fiber, making them an essential component of any wholesome vegan meal.
A star ingredient that sets this casserole apart is farro, an ancient grain also widely known as emmer wheat. I’m particularly fond of farro for its delightful chewy texture and subtly nutty flavor, which adds a wonderful, unique dimension to the casserole that distinguishes it from other stews. It also boasts a relatively quick cooking time of just 15 minutes, making it a convenient and desirable addition. While it can sometimes be a little tricky to find in all supermarkets, I’ve had consistent success sourcing mine from larger Tesco stores. Its unique, satisfying bite and impressive nutritional profile (being rich in fiber, protein, and various minerals) make it well worth the effort to seek out for this recipe.
Farro Alternatives: Ensuring Your Hearty Casserole is Always Possible
If farro proves elusive or difficult to find in your local stores, don’t let that deter you from making this delicious and nourishing stew! Pearl barley is an excellent and readily available substitute, offering a wonderfully similar chewy texture and an earthy flavor that complements the other ingredients beautifully. However, it’s crucial to note that pearl barley takes significantly longer to cook than farro. If you opt for pearl barley, remember to add it to the stew at a much earlier stage in the cooking process, ideally before the main vegetables are introduced. Allow it to simmer and soften adequately for approximately half an hour before you add the chopped vegetables. Then, continue cooking for another half an hour, or until both the barley and all the vegetables are perfectly tender and cooked through.
For those particularly busy days when time is truly of the essence, a fantastic and quick hack is to use a packet of pre-cooked mixed grains. Many supermarkets offer convenient varieties that combine ingredients like quinoa, brown rice, and lentil blends, which are typically ready in just a few minutes after heating. To use this shortcut, simply stir in an entire packet of these pre-cooked grains during the very last five minutes of the casserole’s cooking time. This allows them to warm through thoroughly and absorb some of the rich, savory flavors of the stew. This method provides an incredibly quick and easy way to add a wholesome and satisfying grain component without the extended cooking time required for pearl barley or the potential search for farro, ensuring you can enjoy this comforting meal any day of the week.
The Star Protein: Perfectly Cooked Vegan Sausages
The vegan sausages are undoubtedly the star protein of this delightful casserole, contributing not only substantial texture but also a rich, savory umami flavor that is central to the dish. My personal preference for this specific recipe is Linda McCartney’s vegetarian sausages, known for their excellent texture that holds up wonderfully in a stew and their consistently great flavor. However, the true beauty of this recipe lies in its adaptability; feel free to use any variety of high-quality vegan sausage that you personally enjoy and can easily find in your local grocery store. Brands vary widely in flavor and texture, so experiment to find your favorite.
Regardless of the brand you choose, a crucial tip for achieving the absolute best flavor and texture is to cook the sausages separately before incorporating them into the stew. I typically cook them under the grill (broiler) until nicely browned and slightly crispy, or simply follow the specific instructions provided on their packaging for pan-frying or baking. This separate cooking process allows the sausages to develop a lovely caramelized exterior and a firmer, more appealing texture, which is essential to prevent them from becoming mushy or losing their integrity when submerged in the liquid of the casserole. Once they are cooked to your liking and perfectly browned, slice them into substantial, chunky pieces. Then, gently stir them through the stew during the final stages of cooking, allowing them just enough time to absorb some of the rich, savory flavors without overcooking or becoming too soft.
Serving Suggestions for the Ultimate Comfort Meal Experience
This vegan sausage casserole is a remarkably satisfying and complete meal all on its own, a true one-pot wonder. However, it truly shines and becomes an even more indulgent experience when thoughtfully paired with simple, yet complementary, side dishes. My absolute favorite way to serve it is alongside generous slices of warm, crusty bread, lightly buttered (or, of course, with a high-quality vegan butter). The bread is not just for enjoyment; it’s perfect for enthusiastically mopping up every last drop of the rich, flavorful juices and ensuring that no deliciousness goes to waste. The delightful contrast between the soft, warm bread and the hearty, savory stew is simply divine and deeply comforting.
Beyond traditional bread, consider other delicious accompaniments to enhance your dining experience. A fresh, crisp green salad dressed with a light vinaigrette offers a refreshing counterpoint to the casserole’s richness, providing a welcome balance of flavors and textures. For an even more substantial and filling meal, a side of fluffy couscous, perfectly cooked quinoa, or even creamy, dreamy mashed potatoes would be excellent choices, as they beautifully absorb the savory sauce. A final sprinkle of vibrant fresh parsley or delicate chives just before serving not only adds a bright pop of color but also a burst of herbaceous freshness that elevates and brightens the entire dish. This casserole is truly a crowd-pleaser; it’s so robust and flavorful that even my husband, who doesn’t typically gravitate towards veggie sausages, absolutely adores this hearty and wholesome stew! It’s perfect for family dinners or entertaining guests.
Storing and Reheating Your Delicious Leftovers
One of the many convenient benefits of this versatile vegan sausage casserole is how wonderfully it keeps, making it an excellent candidate for meal prepping or for providing easy, nourishing lunches throughout the busy work week. Any leftovers should be meticulously stored in an airtight container and promptly placed in the refrigerator, where they will maintain their deliciousness and quality for a couple of days. You might even find that the flavors tend to deepen and meld even further overnight, often resulting in a stew that tastes even better the next day – a common phenomenon with many slow-cooked dishes!
When it comes time to reheat, you might observe that the casserole has thickened considerably as it has sat in the fridge – this is perfectly normal and a testament to its hearty ingredients like lentils, farro, and starchy vegetables. While it’s still absolutely delicious and satisfying when thick, if you prefer a slightly looser or more fluid consistency, simply add a generous splash of vegetable stock or a little hot water when you reheat it. Gently warm it on the stovetop over a medium-low heat, stirring occasionally to ensure even heating and prevent sticking, or use a microwave until it is piping hot throughout. This flexibility in reheating means you can enjoy a consistently perfect texture and flavor every single time you revisit this delightful and easy vegan meal, making meal times effortless and enjoyable.

Vegan Sausage Casserole With Lentils and Farro
Ingredients
- 2 Tbsp olive oil
- 1 brown onion peeled and finely chopped
- 4 cloves garlic peeled and crushed
- 1 tsp smoked paprika
- 2 Tbsp tomato puree
- 350 g (2 large) carrots chopped
- 1 small butternut squash (about 650g unpeeled weight) peeled, de-seeded and diced
- 350 g (1 large) potato diced
- 1 400 g (14oz) tin chopped tomatoes
- 2 bay leaves
- 1 litre strong vegetable stock
- 100 g (3.5 oz) dried farro
- 400 g (14 oz) tin green lentils drained
- 8 vegan sausages (I used Linda Mc Cartney)
- salt and pepper
Instructions
-
Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over a medium-low heat. Add the finely chopped brown onion and sauté gently for about 10 minutes, stirring occasionally, until it becomes wonderfully soft and translucent. This slow cooking step is crucial for developing a sweet, foundational flavor for your casserole.
-
Stir in the crushed garlic, smoked paprika, and tomato puree. Continue to cook for another 5 minutes, stirring frequently to prevent sticking. The paprika will bloom in the oil, releasing its smoky aroma, and the tomato puree will caramelize slightly, deepening the overall flavor profile of the stew. This step adds layers of savory goodness.
-
Add the diced butternut squash, cubed potato, tinned chopped tomatoes, and bay leaves to the pot. Pour in the strong vegetable stock, ensuring all the vegetables are mostly submerged. Bring the mixture to a gentle simmer, then reduce the heat, cover, and let it cook for approximately 20 minutes, or until the vegetables are almost tender but still retain a slight bite. They will continue to cook in the next step.
-
Now, stir in the dried farro and the drained green lentils. Continue to simmer for an additional 15 minutes, or until both the farro and the remaining vegetables are perfectly cooked through and tender. Keep an eye on the consistency; if the stew appears too thick, add a splash more vegetable stock or hot water to reach your desired texture. However, aim for a hearty, thick consistency rather than a watery one.
-
While the casserole is simmering, prepare your vegan sausages. Cook them separately according to the instructions on their packaging – whether grilling, pan-frying, or baking. This ensures they develop a delicious crispy exterior and retain their shape. Once fully cooked, slice each sausage into substantial, bite-sized pieces.
-
Before serving, taste the stew and season generously with plenty of salt and freshly ground black pepper to enhance all the vibrant flavors. Finally, gently stir in the sliced, cooked sausages. Serve your hearty vegan sausage casserole immediately, ideally with crusty buttered bread (or a vegan alternative) for soaking up every last drop of the rich, savory juices. Garnish with fresh parsley for a burst of color and herbaceous note, if desired.
