Friends, as we bid farewell to another incredibly delicious year and close out a decade, my heart is overflowing with gratitude. It feels like such a blessing to still be here, passionately creating healthy recipes and living out a dream that once felt so distant. And it’s all thanks to you, our amazing community!
Just ten years ago, my life looked quite different. I was a middle school teacher, newly pregnant with my first child, and an avid reader of blogs – especially those focused on food. Tucked away in my heart was a secret aspiration: to one day start my own food blog. It took me a good five years to gather the courage and take the plunge, and even then, I truly never imagined Confessions of a Fit Foodie would evolve into anything more than a cherished hobby.
Yet, here we are. My days of teaching are behind me, and while I’m a dedicated mom to two busy kids, I also proudly run a thriving business from home. It still feels surreal to say that out loud! Balancing work and life, while navigating the exciting world of entrepreneurship, has been a journey of constant learning and immense satisfaction. I couldn’t be more grateful for this unexpected path.

Oh my goodness, I was beyond thrilled when I saw this recipe climb to the top of our most popular list for the year! Guys, I genuinely adore these Healthy Chicken Lettuce Wraps so much that they might just be my all-time favorite recipe on the blog. They make an absolutely fantastic lunch for meal prep – and yes, I’ll confess, I sometimes eat them cold straight from the fridge! Beyond that, they’re a superb choice for a quick and easy one-pan dinner, offering incredible flavor and a light, satisfying meal. They’re perfectly portion-controlled for the 21 Day Fix and align beautifully with Weight Watchers and 2B Mindset principles. It’s an absolute winner for meal prep, holding up wonderfully in the fridge for days, and it’s also incredibly budget-friendly. Given its versatility, delicious taste, and health benefits, I can completely see why this recipe quickly became a beloved staple in so many of your homes!
Healthy Banana Oatmeal Blender Muffins [Gluten-free | Dairy-free ] | 21 Day Fix Blender Muffins [Weight Watchers]
When I first embarked on this blogging journey, I wouldn’t have considered myself much of a baker, especially as we transitioned to a gluten-free diet and removed dairy for my son. However, with consistent practice and a commitment to healthier alternatives, skills truly do improve. I’m now incredibly proud of my ability to use gluten-free and dairy-free ingredients to craft delicious and healthier baked goods. This recipe was a direct request from one of our readers, and to be honest, I wasn’t entirely convinced that cheeseburger soup sounded appealing to me initially. This is precisely why I adore our community – you were absolutely spot-on with this suggestion!
