From Deviled Egg Skeptic to Superfan: My Journey

Confession time: For a long time, I wasn’t a huge fan of deviled eggs. As someone who truly loves and eats all kinds of food – especially appetizers – my indifference to the deviled egg tray always surprised me. They just never quite sparked my interest. But, these specific Instant Pot Deviled Eggs have completely changed my mind, transforming me into a true enthusiast!

What made the difference? It boils down to one magical word: bacon. And let’s not forget the savory punch of cheddar. While classic deviled eggs have their place, is there truly a better combination than the timeless trio of bacon, eggs, and cheese? Add a hint of fresh chives for that perfect aromatic finish, and you’ve got a recipe for serious deliciousness. These aren’t just appetizers; they’re so incredibly filling that I often find myself prepping them as a satisfying, high-protein snack throughout the week!

And the secret weapon for making these perfectly every time? The Instant Pot! Thanks to this kitchen marvel, preparing hard-boiled eggs – the essential foundation for any great deviled egg recipe – has never been simpler, faster, or more consistently perfect. Say goodbye to frustratingly difficult-to-peel eggs and hello to effortless perfection.

Mastering Instant Pot Hard-Boiled Eggs with the 5-5-5 Method

The foundation of amazing deviled eggs is perfectly cooked hard-boiled eggs. With the Instant Pot, we achieve this effortlessly using the popular 5-5-5 Method. This technique ensures consistently easy-to-peel eggs with perfectly cooked yolks every single time, without any greenish-gray rings often seen in overcooked eggs. Here’s how it works:

  1. 5 Minutes Cook Time: Place your eggs on a trivet or steamer basket in your Instant Pot with 1 cup of water. Use the Manual or Pressure Cook setting for 5 minutes. If your Instant Pot is one of the newer models with a dedicated “Egg” setting, feel free to use that – I’ve heard it works wonders!
  2. 5 Minutes Natural Pressure Release (NPR): Once the cooking cycle is complete, do nothing! Allow the Instant Pot to naturally release pressure for 5 minutes. This gentle release helps prevent the eggs from becoming rubbery and makes them incredibly easy to peel. I highly recommend setting a timer, as distractions can easily make you forget this crucial step!
  3. Hard-boiled eggs submerged in an ice bath to stop cooking and aid peeling
  4. 5 Minutes Ice Bath: After the 5-minute natural release, manually release any remaining pressure. Once it’s safe to open the lid, carefully transfer your perfectly cooked eggs into an ice bath for 5 minutes. This step immediately stops the cooking process and further contributes to those super easy-to-peel shells.

The result? The most beautifully cooked, simplest-to-peel hard-boiled eggs you’ve ever made! You’ll be amazed at the consistent quality. Once peeled, your eggs are ready for their transformation into delicious deviled eggs. For our irresistible filling, we combine the creamy yolks with savory bacon, sharp cheddar cheese, mayonnaise, Greek yogurt, a hint of mustard, a splash of lemon juice, and a pinch of salt. This rich mixture is then spooned (or piped, if you’re feeling fancy!) into the egg white halves and topped with extra bacon, fresh chives, and more cheddar for that ultimate flavor burst.

Make-Ahead Tips for Instant Pot Deviled Eggs

Planning a party or simply want to prep healthy snacks for the week? These Instant Pot deviled eggs are great for making ahead with a few simple tips:

  • For Parties: While you can fill the egg halves the night before, for the freshest taste and best presentation, it’s ideal to assemble and fill your deviled eggs on the day you plan to serve them. This prevents the filling from drying out or the egg whites from absorbing too much moisture.
  • For Personal Snacks: If you’re making these for yourself as a snack, fully assembled deviled eggs will happily keep in an airtight container in the refrigerator for 2-3 days.
  • The Best Make-Ahead Strategy: The real beauty of making deviled eggs in advance lies in prepping the components. You can hard-boil your eggs up to a week ahead of time! Store them unpeeled in the refrigerator. The night before you need your deviled eggs, simply peel them and prepare the yolk filling mixture. Store the peeled egg white halves and the filling separately in airtight containers in the fridge.

The next day, all that’s left to do is spoon (or pipe, if you want to get creative!) the delicious mixture into the egg white halves, add your garnishes, and you’re good to go! No last-minute stress, just perfectly prepared deviled eggs ready to enjoy. #notfancy, but definitely delicious and efficient!

Dietary Considerations: Keto, 21 Day Fix & Weight Watchers Friendly!

One of the best features of these Instant Pot Deviled Eggs is their adaptability to various dietary plans:

  • Low Carb & Keto: Yes, these deviled eggs are naturally low carb, making them an excellent choice for a satisfying snack or appetizer on a ketogenic diet. They’re rich in healthy fats and protein, keeping you feeling full.
  • 21 Day Fix: For those following the 21 Day Fix, these deviled eggs are a fantastic “no yellow” (carb-free) snack option. Each serving (2 egg halves) counts as 1/2 Red (protein), 1 tsp (healthy fats from mayo/yogurt), and a trace of Blue (cheese). It’s an easy way to get your containers in!
  • Weight Watchers: Good news for Weight Watchers members! Each delicious deviled egg half is only 1 Weight Watchers Freestyle Point! Enjoy them guilt-free and stay on track with your goals. Woohoo!

Can I make these Instant Pot Deviled Eggs without mayo?

Absolutely! If mayonnaise isn’t your preference, or if you’re looking to reduce fat content further, you can easily omit it from this recipe. Simply double the amount of Greek yogurt to maintain that creamy texture. This substitution also comes with an added bonus for 21 Day Fixers: it removes the “teaspoon” container count, making it even more container-friendly! Woohoo for more flexibility!

Can I make these Deviled Eggs dairy-free?

Yes, making these deviled eggs dairy-free is straightforward! To achieve this, you will omit the Greek yogurt and either double the mayonnaise or use a dairy-free mayonnaise alternative. For the cheddar, you can substitute with your favorite dairy-free shredded cheese or simply leave it out altogether. The savory bacon ensures they will still be incredibly delicious! This modification also makes these loaded deviled eggs compliant with Paleo and Whole30 dietary plans, expanding their versatility even further.

  • 3
    pieces
    cooked turkey bacon
diced, and 1 additional piece for topping **Tip! Use the saute function of your Instant Pot to cook your bacon!

  • 2
    tablespoons
    shredded cheddar cheese
plus 2 T more for topping

  • 2
    tablespoons
    + 1 teaspoon mayo

  • 2
    tablespoons
    + 1 teaspoon Greek yogurt

  • ½
    teaspoon
    yellow dijon, or spicy mustard
    (I prefer yellow)

  • 2
    teaspoons
    chives

  • 1
    teaspoon
    lemon juice

  • Sprinkle
    sea salt

  • Sprinkle
    paprika

Instructions

  • Add 1 cup of water to your Instant Pot and place 6 eggs on top of your trivet or steamer basket. If you don’t have either, you can place your eggs directly in the water. Lock the lid securely.
  • Set your Instant Pot to cook for 5 minutes on Manual (high pressure). When the cook time is over, allow a 5-minute Natural Pressure Release.
  • After the 5-minute Natural Release, carefully release any remaining pressure using the quick release method. Once it’s safe to open your Instant Pot, remove your eggs and immediately place them in a 5-minute Ice Bath.
  • Once the eggs are cooled, peel them and place them in your refrigerator until you are ready to fill them.
  • For the deviled eggs, cut each hard-boiled egg in half lengthwise, from top to bottom. Carefully remove the yolks from the egg white halves. In a medium bowl, mash the yolks and mix in the mayonnaise, Greek yogurt, mustard, lemon juice, 3 pieces of diced bacon, cheddar cheese, and a sprinkle of sea salt. Mix until the filling is smooth and creamy. Then, spoon the yolk mixture evenly into the hollowed-out egg white halves.
  • Finally, garnish your deviled eggs by topping them with additional bacon bits, shredded cheddar cheese, and fresh chives. Finish with a light sprinkle of paprika for color and extra flavor.
