  • 3 cups almond flour
  • 1 teaspoon baking soda gluten free
  • 1/4 teaspoon sea salt
  • 1/4 cup extra-virgin organic coconut oil
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 2 egg whites
  • 1 teaspoon pure vanilla extract
  • 1/2 cup chocolate chips

Instructions

 

  • Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper. This step is crucial, as these cookies tend to stick without it!
  • In a medium bowl, combine the almond flour, gluten-free baking soda, and sea salt. Mix these dry ingredients thoroughly and set the bowl aside.
  • In a separate larger bowl, beat the extra-virgin organic coconut oil and pure maple syrup together until the mixture becomes light and creamy. This usually takes approximately 4-5 minutes with an electric mixer, though we found 3 minutes was sufficient for a good blend.
  • Add the large egg, two egg whites, and pure vanilla extract to the wet ingredients. Continue to beat the mixture for an additional 2 minutes, ensuring everything is well incorporated.
  • Gradually add the reserved almond flour mixture to the egg and oil mixture. Mix until just blended. Be careful not to overmix the dough.
  • Finally, fold in the chocolate chips until they are evenly distributed throughout the dough. Again, mix until just blended to maintain the perfect cookie texture.
  • Drop rounded tablespoons of cookie dough onto your prepared baking sheets. If you prefer a more traditional, flattened cookie appearance, gently press down on each cookie with a spatula before baking. (We were too eager to enjoy these, so we happily skipped this step!)
  • Bake for 14-16 minutes, or until the edges are golden brown and the centers are set. Allow to cool slightly on the baking sheets before transferring to a wire rack to cool completely. Enjoy your guilt-free indulgence!

While a full yellow for one cookie might seem like a lot, remember these are made with wholesome ingredients and no refined sugar, making them a much better choice than conventional cookies. Many people might feel it should be 1/2 yellow, but it’s important to follow the official guide.
